Playing Catch Up . . .

This is one of those random posts where I ramble about nothing important. It's a chance for me to play catch up with myself - especially considering that I originally began this blog as a journal/family history - so sorry if you happen to be looking for something super exciting to read. ( I'm hoping the picture of food may have lured some of you in.)

First up today - the FOOD! On Friday I was looking for a really easy and very yummy recipe that I could make quickly. This one came to mind, and when I saw how good the photo came out, I knew I had to share it on the blog! So devoted readers, run get your pencils, because this one had the Hubby raving and it is EASY PEASY! (I've modified this recipe just slightly from the one my fab sis-in-law Mindy gave me.)

BBQ Chicken Salad

Romaine lettuce
Substantially sized pieces pulled from one leftover Rotisserie Chicken (I used Costco's)
Bottled BBQ sauce
1 can corn niblets, drained
1 can black beans, rinsed and drained
3 green onions, chopped
1 ripe avocado, cut in chunks
2 flour tortillas (cut with pizza cutter and cooked in oil until just crispy)
shredded Monterrey jack cheese
tomatoes

Dressing: 2 parts any ranch dressing, 1 part green chile verde sauce, mixed thoroughly.

Mix chicken pieces in bowl with BBQ sauce until coated. Set aside. Place lettuce in large bowl and top with all ingredients, topping with cheese and tortilla strips last. Add dressing. Enjoy!

I'd love to know if anyone else has come up with great recipes using the leftovers from a rotisserie chicken. I've got a good chicken noodle soup and a delicious quesadilla filling that I'll share in the future if anyone is interested.

Second, I thought it would be fair to warn that the blogging may be sporadic because the activity pictured above has taken over our lives again. Chris has baseball four days a week a Hannah has softball four days a week. None of the days seem to coordinate with each other, unless they are on the same day AT THE EXACT SAME TIME - so the Hubby and I are splitting up and the RedDog just tags along and makes new friends where ever we go. If it sounds crazy, it is! But they love it so and are quite enjoyable to watch. I will breathe a sigh of relief in June when it's all over though.

Last - baby bird update! Still there, still sleeping a lot, but definitely growing (scroll down a few posts to see how much smaller they were just a week ago!) I can hear them in the morning, calling out to their mom for worms as I check my email on the computer. Four little birds can make a heck of a lot of noise! I noticed today when I took this picture that the Mom and Dad are definitely leaving their mark on our door - in the form of poop! Lucky Hubby . . . he'll have fun cleaning that off. (I'm the nurturer, remember?)

I guess that's about it for now. Gotta go make dinner so we can get to Hannah's game tonight. Go Pixies!

That is a delious salad, I've had it at Mindy's, YUM!
Aunt Sylvia told me just last night that there is a cookbook out with recipes just for Rotisserie chicken.

Okay that Pixie chick is one cute girl. In the photo she looks just like her daddy who is a very serious ball player. She looks ready for a winning season.

Those baby birds look like good snuggle buddies. That won't last long, they must be really tiny because the nest is so small. Chirp, chirp!

Um, yeah that salad is making me salivate and I'm not really a huge salad fan. Thank you for the recipe I can't wait to try it.

Perfect timing! I just bought a rott 'chicken today! So what's the quesadilla recipe??? I've been craving a good one for months now and have never found one.

I am always looking for rotisserie leftovers, I actually have one in my fridge now. My favorite salad is the BBQ Ranch Chicken Salad at Cheesecake Factory! Now I have a craving

This post was funny to me because I was like, "hmmm that BBQ chicken salad looks good." Then I remembered that's what we are having for dinner tonight. Word!
