A Little Lunchtime Facelift . . .



If you are a mom, and you are at all like me, you don't want to fix yourself lunch after throwing together two lunch boxes in the morning and then a peanut butter and jelly for the little guy in the afternoon. I am the mom who scarfs down the crust of a grilled cheese sandwich from my kid's plate and calls it good. Well, that is all about to change!

Yesterday I bought our family a little culinary toy -- a panini sandwich maker. I am in love with our new toy! Last night we had delicious gourmetish turkey, bacon, provolone and pesto sandwiches on roasted garlic bread. YUM. And today, when the dreaded lunch hour came, I decided I might as well throw together a little provolone on wheat for myself. It was perfect for this rainy, cold day and I gobbled it up with a smile on my face. (And the lines on the bread are so cool, so I took a picture to share with you all! )

Now that I've shared my exciting news, you might also want to know that the Hubby has an interview tomorrow for the China job. Stay tuned for more info! (Below: The new toy that made my day - striking resemblence to a waffle iron!)

I heart your panini machini. I, too, survive on the cast-offs of a small child. That and protein bars. Keep us posted on how long the panini machini maintains its engenue status.
